A wonderfully sweet finish that reminds one of a leisurely walk on a early Autumn day.
1 1/2# apples*, peeled, cored and diced
1/3 c. water
dash salt
1 T. lemon juice
1/2 t. cinnamon
1/3 c. sugar or sweetener of choice to taste
- Combine apples, water, salt and lemon juice in heavy 2 qt. saucepan.
- Cook on medium heat until apples are very soft, stirring occasionally to prevent scorching.
- Remove from heat.
- Stir in cinnamon and sweetener to taste.
- Serve warm or cold.
You can leave it chunky or smooth it out with a potato masher, a sieve or an immersion blender. If using a standard blender, be sure to vent the top to prevent heat from building up inside. Make about 2 cups.
*I prefer McIntosh or Fuji apples. Granny Smith would also be good but may need additional sweetener.
